What Is The Function Of Oil In Cooking?
At 250000 BC, when early man learnt how to produce fire, it was the time he also learnt how to use animal fats for cooking. It was an accidental discovery when he saw oil naturally dripping out of meat when he was cooking it.
First things first, what is the function of fats while cooking? To be short, fats not only add flavor but it is an important medium to transfer heat from the fire to the food.
For instance, when we take non-fat vegetables in a pan over heat, they couldn't cook properly without oil. It will be half cooked and remain raw so adding oil to the veggies before cooking helps to transfer heat evenly.

How Cold Pressed Oils Were Discovered?
Before the 1890's, western society only consumed animal fats. Tallow, lard, butter, and suet are examples of animal fats.
On the other hand, the eastern societies consumed cold pressed fats like coconut oil, peanut oil. And the amazing discovery of cold pressed oils are traced back during the Indus valley civilization where archaeologists found the oil making chekku 5000 year old and charred sesame seeds in the ruins of Harappa.
And these cold pressed oils are not new to us. They are forgotten for many years but now, people are welcoming cold pressed oils to their kitchen due to the awareness of the blessing in disguise called refined oil.
….
What Are Cold Pressed Oils And How They Are Made?
During the olden days, chekku is used to grind seeds at low temperature with the help of bulls. The chekku oil extraction is 4000 years old and was discovered by the Harappan civilization. The vaagai maram is used to absorb heat and maintain the oil extraction at atmospheric temperature.
Cold means the presence of low temperature, especially in the atmosphere.
Pressing is an act or instance of applying pressure or force to (something) to flatten or shape or squeeze it.
The bulls operate the chekku and they would move slowly. This method makes the oils retain the nutritional value and flavours.
Today, by another method without affecting the animals, the seeds are poured into the pestle and the wooden mortar spins slowly while the pestle stays still at a very minimum atmospheric temperature. After 20 minutes, the oil pours out of the small tap on the side of the mill into the pot.

Why Cold Pressed Oils are Divine?
So, what is really worth your attention about cold pressed oils?
Low Temperature Settings
Our traditionally made cold-pressed oils are extracted at low temperatures which extract the right amount of oil from seeds. This low temperature setting retains the nutrients and flavor within the oil.
Zero harmful preservatives
And this is a really important feature that should be noticed by everyone. Cold Pressed oils are filtered using natural methods like sunlight and are strictly confined to not adding any kind of preservatives to extend their shelf life and make them colourless.
Shelf Life
The shelf life of cold pressed oils are 6-9 months without the addition of preservatives.
A Minimal Amount Is Enough- While cooking, cold pressed oils are way more better than refined oils. Since the oil is thicker in density, 3 litres of oil per month is enough for a family of 4 members.
Triple A Grade, High Quality Seeds
High quality seeds are bought from farmers, shelled and crushed in the pestle at low temperature in the pestle.
Naturally Vegetable Oil
This term refers to any oil derived from plant sources. For example, sunflower oil, sesame oil, peanut oil, mustard oil, neem oil, castor oil, olive oil, safflower oil, soybean oil, etc. These oils are naturally healthy and good to consume.
In vegetable oils, there is no need for adding substances for its color, taste, preservatives and flavor and they are 100% natural aroma and trustworthy.
Cold Pressed Oil Are Not Extracted At High Temperatures Like Refined Oils Do
Cold Pressed oils are not extracted at higher temperatures like refined oils.
Refined oils are extracted at 240°C which forces to extract a large amount of oil from a certain amount of seeds and doesn't contain any nutrients, flavour and aroma.
Whereas in our traditionally made cold-pressed oils, oils are extracted at low temperature which extracts the right amount of oil from seeds and retains the nutrients, flavour and aroma.
Cold Pressed Oils Doesn't Contain Any Chemical Preservatives As Refined Oils Do!
The most important reason that Coldpressed Oils should receive a golden crown is they contain zero preservatives. And hence their shelf life is shorter and you can buy them whenever you need.
Refined oils get a bad reputation among society for manufacturing oil with lots of preservatives to increase their shelf life.
Have you wondered why refined oils are colourless and odourless?
First of all, the refined oils are treated with acid, or bleached, purified using an alkali. They can be also neutralized, deodorized, and filtered using chemicals like hexane. And finally, the colourless, odourless, nutrients- destroyed liquid which is called refined oil is left out!
Contain Healthy Fats While Refined Oil Don't!
According to the London Imperial College School Of Medicine, Coldpressed oils are extracted at low temperatures, keep their omega 3 and omega 6 fatty acids intact which is necessary for our body in improving eyesight, immunity and internal organ protection.
While in cases of refined oils, they have pro-inflammatory properties and omega 3, 6 fatty acids ratio are skewed.
Coldpressed Oils Improve Good Cholesterol Levels Whereas Refined Oils Do The Contrary!
Cold Pressed oils contain polyunsaturated fats and monounsaturated fats / monounsaturated fatty acids which help to lower bad cholesterol levels. In cases of refined oil, refined oil contains trans fat which increases bad cholesterol levels.
….
Why Coldpressed Oils Are Higher In Price When Compared To Refined Oils?
3 kg seeds are used/required for extracting 1 liter of oils at the lowest atmospheric temperature, the nutrients are maximum and more favorable, and thickest when compared to other oils in the market. Get your fact straight, cold pressed oils are the real oils whereas refined oils are a blessing in disguise attracting consumers to fall for bumper offer traps.
Instead of wondering why Cold Pressed Oils are expensive, the right question to come up is why are refined oils conservatively more cheaper? Refined should at least be sold at the right price of the raw materials added, unless they are not!
