Sigh! Stepping out of our gate amid the lockdown has become a challenge in itself, concerns over gathering groceries and essential items are still continuing. Does nobody know whether still the lockdown is extended?
You can still make this lockdown to the tastiest summer! Now, we are going to check out some salad recipe which is perfect for summer cookouts and easy family dinners, and some of the best ways to use the season’s delicious fruits and veggies.

Since not every ingredient is available during this lockdown, you can also make simple substitutions which won’t affect much.
So, let’s dive straight now to get amazed by the tastebud awakening flavours and textures of mixtures of the recipes!

1. Thai Green Mango Salad Recipe

Servings :4
Time taken:15 mins

Ingredients:

  • 1/4 cup of lime juice
  • 2 tbsps of brown sugar
  • 1-2 tbsps of chilli flakes
  • 3 tbsps of soya sauce

Salad:

  • 1/4 cup of shredded coconut
  • 2 mangoes (firm and raw)
  • 2 cups of greenbean sprouts
  • 1/2 cup fresh coriander
  • Handful of peanuts or cashews
  • 1/3 cup of fresh mint leaves
  • 3-4 spring onions
  • Optional: you can also add homemade paneer (tofu) or 1 cup cooked chicken

Method:

  • Mix together all the salad dressings ingredients in one cup. The dressing should be more sweet than sour. Then set aside.
  • Place coconut in a dry frying pan. Stir fry it in a low medium heat flame for two to three minutes till it becomes golden brown.
  • Peel the skin of the mangoes.Grate the flesh of the mangoes into the mixing bowl.
  • Add the bean sprouts, coriander, onions, fresh cut chilli ( optional) and the toasted coconut. Toss well to combine together.
  • Add the dressing and toss again. Add more soya sauce if needed. You can add more honey if you want sweeter or more lime juice if you want sour.
  • Add them to the plate. Sprinkle the nuts, coriander leaves, and remaining toasted coconut on top.
  • Serve them.

2. Meditarranean Watermelon Salad

A quick refreshing salad with hydrating ingredients. Watermelon cubes, cucumber, tomatoes, bell peppers, cabbage with light dressing.

Servings – 4
Total time- 15 mins

Ingredients:

  • Two bowls of watermelon cubes
  • 2 yellow capsicums
  • 2.5 cups of  onion
  • 2 cups of cucumber
  • 1 cup of tomato
  • Pomegranate juice
  • Lettuce
  • 1 tbsp of mustard paste ( Grind 1 tbsp of black mustard seeds with salt, sugar and water to make the paste)
  • 2 tbsp of olive oil
  • I pinch of jeera powder
  • Chopped coriander
  • Flax seeds( ellu vithaigal)
  • Pistachios
  • Salt and pepper

Method:

  • Pour pomegranate juice into a bowl.
  • Add mustard paste, jeera powder, salt and pepper and whisk it well.
  • In another bowl, add the watermelon cubes, bell peppers, onions, tomatoes.
  • Add coriander leaves, salt and pepper. Add lettuce leaves or cabbage.Toss them well.
  • Serve chilled.

3. Haiwaiian Fresh Fruit Salad Recipe

Servings :4
Time taken: 15 mins

Ingredients:

  • 1/2 cup fresh lime juice
  • 1 1/2 tbsp honey
  • 3/4 tsp of finely chopped fresh ginger
  • Bite sized pieces of banana, mango, watermelon, pineapple ,orange and apple

Method:

  • In a large bowl, add honey, fresh lime juice and ginger.
  • Toss all fruits together.You can serve them chilled.If using bananas,serve them as soon as possible.

4. Corn Feta Salad Recipe

Servings :6
Time taken : 20 mins

Ingredients:

  • 4 cups of fresh corn
  • 1 cup of tomato,chopped into slices
  • 1/4 cup of onion, finely chopped
  • 1/4 cup of coriander leaves
  • Crumbled cheese( optional)
  • Juice of one lime
  • Salt
  • Freshly ground black pepper

Method:

Toss all ingredients in a bowl and season it with salt and pepper.

5. Cucumber And Tomato Ukrainian Salad

Ingredients:

  • 1 large pickled cucumber,chopped
  • 2 medium sized tomatoes, chopped
  • 1/4 cup of onion ,sliced
  • 1/4 cup of coriander leaves, finely chopped.
  • 2 tbsp olive oil
  • 2 tbsp toasted sesame seeds oil
  • 1/2 tsp salt
  • Ground black pepper
  • Vinegar to taste( optional)

Method:

  • In a large bowl, add the tomatoes, cucumbers, onions, toasted sesame oil,olive oil, salt, pepper, vinegar.
  • Toss gently from the bottom.
  • This is best to be served soon.

6. North American Mango Slaw Recipe

Preparation time : 5 mins
Servings :4

Ingredients:

  • 2-3 cups of cabbage,finely shredded
  • 1 large ripe mango, chopped into bite sized pieces.
  • 2 tbsp of coriander leaves.
  • 1/2 tsp salt.
  • Vinegar to taste

Method:

  • Add all ingredients together in a large bowl and gently toss to combine.
  • Refrigerate for some time.
  • Serve it!

7. Herbed Potato Salad

Servings – 4
Time taken – 20 mins

Ingredients :

  • 1/4 cup of basil leaves
  • 1/4 cup of parsley leaves( it can be your choice of herbs)
  • Potatoes – 5 to 6
  • Oil
  • Garlic cloves – 3
  • Black pepper
  • Salt to taste

Method:

  • Boil the potatoes till they are cooked well.
  • When the potatoes are warm,peel and chop them.
  • Take the chopped potatoes in a bowl.
  • Add salt and pepper to taste.
  • Drizzle olive oil.
  • Gently toss and mix the salad till the oil and herbs have coated the potatoes.
  • Serve the herbed potato salad.

8. Spiced Baby Potatoes Salad Recipe

Servings -6
Preparation time – 20 mins

Ingredients :

  • 12 Baby potatoes- halved
  • One cup onion
  • 1 tbsp of refined oil
  • 1 tbsp of cumin seeds
  • One teaspoon of coriander seeds
  • 1 1/2 tsp of ginger
  • 4 cloves of garlic
  • 1 sliced green chilli
  • 1/4 cup of curd
  • 1 tbsp of lemon juice
  • One handful of curry leaves
  • 1 handful of coriander leaves
  • Crushed pepper
  • Salt to taste
  • Pomegranate seeds

Method:

  • Heat a pan of water over medium flame. Add the potatoes and bring to boil.
  • Transfer the potatoes to a large bowl. Heat little oil in a frying pan.
  • Stir fry the cumin and coriander seeds. Add the grated ginger, garlic, and half of the green chillies.
  • Stir fry them well. Remove from the flame and let to cool.
  • Add this to yogurt along with lime water.Whisk well.
  • Add chopped coriander leaves,pepper powder and a pinch of salt. Put the mix to the potatoes bowl and toss them well.
  • Heat little oil in pan. Saute the onions for a minute.
  • Add the chopped curry leaves and remaining green chillies. Drain excess oil.
  • Sprinkle over potato salad and garnish with pomegranate seeds.
  • Serve them.

9. Alphonso Mango Salad

Servings – 4
Preparation time- 15 mins

Ingredients:

  • 3 ripen mangoes , chopped into slices
  • I red capsicum chopped into slices
  • 1/4 onion into slices
  • 1/4 cup of coriander leaves, chopped

Salad dressing:

  • 1/4 cup of lime juice
  • 2 tsp of white sugar
  • 1/8 tsp of red people flakes
  • 1/4 tsp of salt
  • I tbsp of vegetatable oil
  • Freshly ground pepper

Method:

  • Combine all the ingredients in a large bowl.
  • Toss to combine.If you want to refridgerate it, do that in this point before adding salad dressing. Drizzle the salad dressing and serve them.
