1. Shahi Paneer Recipe

The term shahi refers to the royal title of shahanshah in Mughal India. It is eaten with Indian bread like chappathi and naan.

Of course! Naan with paneer is a lovely combination and I have no words to describe my love for them.

Note: Muglai paneer recipes don’t involve tomatoes, however when you need them, you can include which makes the recipe is a little tangy.

Preparation time: 5 mins
Cooking time : 30 mins
Total time : 35 minutes
Servings : 4

Ingredients:

  • 1.5 cup of paneer cubes
  • 0.5 cup of curd
  • 1 tsp of ginger garlic paste
  • 1 tsp of garam masala
  • 1/8 tsp of turmeric
  • 1/4 tsp of red chilli powder
  • Salt
  • 2 tbsp of ghee or oiled
  • 3/4 cup of water
  • 1-2 inch cinnamon
  • 1/2 tsp of cumin or jeera
  • 2 cloves

For Shahi Paste

  • 10 whole cashews
  • 8 almonds
  • 2 green cardamoms
  • 1 green chilli
  • cup of chopped onion (1 or 2 onions)
  • 1 cup of tomatoes (1 or 2)

Preparation

  • Sizzle one tbsp of oil in a frypan and heat it.
  • Add cashews, almonds and cardamoms into the pan and fry them till they become light brown.
  • Add the onions and green chillis and let them cook. You can put tomatoes now (optional).
  • Cool the mix completely, add water and blend them using a food blender into a smooth paste.
  • Fry the paneer using ghee in a separate pan and put the fried paneer cubes in hot water to make them soften.

How To Make Shahi Paneer?

  1. Heat the pan and sizzle oil in it.
  2. Add cumin, cloves, and cardamom into the pan and fry them until you smell the aroma.
  3. Add ginger-garlic paste and cook.
  4. Next, add the onion cashew paste, garam masala, chilli powder, turmeric and salt.
  5. Let them cook for 3 to 4 minutes.
  6. Add curd to a bowl and beat it.
  7. Simmer the flame and add curd to the pan.
  8. Mix them well and let them cook a while.
  9. Pour half to 3/4 cup of water. Add saffron to the pan ( optional).
  10. Cook till the Shahi paneer gravy thickens.
  11. Add salt to taste.
  12. Add fried paneer to the gravy and let them cook in simmer.

Ingredients Needed:

  • 1.5 tbsp of oil
  • One teaspoon garam masala
  • 1/4 tsp of turmeric
  • One teaspoon coriander powder
  • 1 teaspoon Kasturi methi
  • One teaspoon ginger garlic paste
  • 1 teaspoon red chilli powder
  • Half teaspoon chaat masala
  • Salt to taste
  • 6 tablespoons of yoghurt (thick curd) large onion cut into layers
  • 1 Green Capsicum chopped into cubes
  • 1 Red capsicum chopped into cubes
  • I tbsp of Besan(gram) flour

Preparation

  1. Stir yoghurt with garam masala, turmeric, coriander powder, chilli powder, chat masala, oil, salt and ginger garlic paste.
  2. Mix everything well and check the salt taste. Add more if you want.

Marination

  1. Put the onions and capsicums into the curd masala preparation. And the Paneer cubes along with them, mix well and let them marinate.
  2. Cover and keep it in the fridge for ONLY 1 to 2 hours. Long time marination can cause them to break.
  3. After 1-2 hour marination, use skewers to thread the chunks of capsicum and paneer.

How To Make Paneer Tikka?

  1. Heat the tawa and add one tablespoon of oil and let them sizzle evenly.
  2. Then place paneer skewers in the tawa and make sure they are not overcooked.
  3. Keep checking and turn them around on all sides for even cooking.
  4. Transfer them to the serving plate! Enjoy with your guests!

Note: Add besan flour to the marinade as it helps the curd or yoghurt to blend with the paneer well. Otherwise, the mix will be separated while grilling in the tawa.

Ingredients Needed:

  • 200 grams paneer
  • 3 tbsp of cornflour
  • 3 tbsp of maida flour
  • 1/2 tsp of black pepper
  • 1/2 tsp of salt to taste
  • 1/4 tsp of red chilli powder
  • Water needed
  • 3-4 tbsp oil
  • 1 tablespoon of garlic
  • One green chilli
  • 4 tbsp of Spring onion
  • 1/2 cup capsicum
  • 1 medium onion ( sliced into layers)

Paneer Sauce

  • One tbsp of soya sauce
  • 1 tbsp of chilli sauce
  • 1/2 tsp of vinegar
  • One tsp of sugar
  • 1.5 teaspoon of red chilli powder
  • 2 tbsp of tomato ketchup

Frying Paneer

  1. Add 3 tbsp of corn starch and 3 tbsp of maida flour to the pan.
  2. Secondly, add 1/4 tsp of red chilli powder, 1/8 tsp of black pepper, salt. Put some water and make a smooth batter.
  3. Heat a deep pan and add 3-4 tbsp of oil for shallow frying.
  4. Add the paneer cubes and gently coat them using the batter.
  5. After the oil gets heated, pick the batter coated paneer cubes gently using a spoon and drop them smoothly in the hot oil.
  6. Stir and fry them in medium heat on all sides.

Sauce Preparation

  1. Add 1 teaspoon of the corn starch to the mixing bowl and add water in it. Stir well and set aside.
  2. Then, add 2 tbsps of chilli sauce, 1 tbsp of soya sauce, 2 tbsp of tomato ketchup,1 tsp of sugar, 1/2 tsp of vinegar. Set this aside.

How To Make Chilli Paneer?

  1. Add one tbsp of oil to the frypan and fry the garlic cloves which are chopped.
  2. Add two tbsp of Spring onion and 1 medium onion which are cut in layers.
  3. Also, add in 1 green chilli and half cup diced capsicum. Saute on a half flame in 2 mins.
  4. Add the sauce to the pan and add sauce preparation. Mix everything and cook on low heat.
  5. Check the taste of the sauce.  Add the fried crispy paneer cubes to the chilli sauce and mix. Add the green spring onions.
  6. Serve them hot with rice, chappathi, noodles!

How To Make Malai Paneer?

  1. Heat the pan and add 2 tbsp of oil.
  2. Add the onions and short the onions until their turn golden brown.
  3. Thirdly, add the ginger garlic paste to the pan.
  4. Saute them together until raw smell goes away.
  5. Add coriander powder, red chilli powder and turmeric powder to the pan while on a low flame.
  6. Add the Paneer cubes. Stir them together on a low flame until they are coated with the masala.
  7. And low-fat cream to the Paneer cubes and stir them together for 2- 3 minutes.
  8. Add salt to taste.
  9. Add Kasturi methi and crushed pepper to the dish.

5. Capsicum Paneer Recipe

Ingredients Needed:

  • 100 grams of paneer
  • Three medium capsicums chopped into slices
  • Two crushed tomatoes
  • Two chopped onions
  • 1/2 tsp of Ginger finely chopped
  • 1/2 tsp salt
  • 1 tbsp of grated coconut
  • 1/2 tbsp of coriander seeds
  • 4 cashew nuts
  • 3 tbsp of oil
  • 1.5 tsp of Cumin seed powder
  • 1/2 tsp of Kasturi methi
  • 1/2 tsp of red chilli powder
  • 1/8 tsp of Turmeric powder
  • 1/4 tsp of garam masala powder
  • 1 red chilli, halved
  • Water needed

How To Make Capsicum Paneer Recipe?

  1. Heat a pan and add half tbsp of oil over medium-high flame.
  2. Add chopped capsicums to the pan and let them cook for 3 minutes. Shallow fry until them until they are still crunchy.
  3. Take them from the pan and set aside.
  4. Add one tbsp of oil in the pan and keep it in medium flame.
  5. Add cashew nuts, coriander seeds, coconut which are grated, chopped ginger, red chilli and cumin seeds and saute for 20-30 seconds. 
  6. Then, add chopped onions to the pan and saute them until they become golden brown.
  7. Turn off the flame and let it cool.
  8. Transfer to the grinder and grind them to a smooth paste.
  9. Again add one tbsp of oil to the pan and add the paste.
  10. Stir fry the paste until they become light brown.
  11. Add turmeric powder, chilli powder and tomato puree to the paste.
  12. Mix them well while keeping the flame on low flame.
  13. Stir fry for 3-4 minutes.
  14. Add the garam masala powder, water and salt to the mixture. Bring them to boil over medium flame. Leave it for 2 to 3 minutes.
  15. Then add capsicum and Paneer cubes along with kasuri methi. Stir them gently in between.
  16. Add fresh cream. Mix well and turn off the flame.
  17. That’s it! The delicious capsicum paneer in on the table. Serve it and enjoy!

  • 1 cup of water

  • Paneer cubes 200 grams
  • 1 tsp of salt
  • 1 cup of water
  • 2 tbsp of cream
  • 2 tbsp of chopped coriander
  • 1/2 tsp turmeric

How To Make Paneer Butter Masala?

  1. Firstly, heat 1 tsp of butter and oil in a large pan.
  2. Add chopped onions, garlic and ginger into the pan and saute them until the onions turn golden brown and the raw smell of ginger and garlic goes away.
  3. Add the two chopped tomatoes and the 10 cashew nuts in it.
  4. Let them cook for 10 minutes.
  5. Let it cool completely and blend them into a smooth paste using a blender.
  6. In the tawa, add 2 tablespoons of butter, two pods of cardamom and bay leaf together.
  7. Turning to a low flame, add turmeric powder, chilli powder, garam masala and cumin powder.
  8. Saute them together without letting them to have a burnt smell.
  9. Add the onion-tomato paste prepared to the tawa. Saute them until they are cook.
  10. Add one cup of water, one teaspoon of salt and half teaspoon of sugar.
  11. Then, add cream to the tawa along with paneer cubes and mix well.
  12. Simmer the stove and cover the lid for a few minutes.
  13. Add 2 tbsp of coriander, and 1/2 tsp of Kasturi methi and garam masala.
  14. Serve hot with chappathi and enjoy the meal!

Method:

  1. Grind tomatoes, onions, green, chilli ginger and garlic into a smooth paste. Keep it aside.
  2. Heat a pressure cooker and add 2 tablespoons of oil. Pour the smooth paste in it.
  3. Add red chilli powder, turmeric powder coriander powder and let them cook for 10 minutes on a low to medium flame.
  4. Add the potatoes chopped, green peas and paneer to the paste and stir well.
  5. Then, add salt and pour one cup of water. Cover the lid of the cooker and pressure cook till they get cooked. Leave for 2-3 whistles.
  6. Open the cooker and check the consistency. If it is thin, simmer the stove to get the correct consistency. If it appears too thick, add water to it.
  7. Add garam masala and coriander leaves.
  8. Serve them with chappatis, rotis etc. Enjoy!

  • One tbsp oil
  • 12 whole cashews
  • Salt as required
  • Coriander leaves, finely chopped

  • Paneer cut into cubes (250 grams)
  • 1 teaspoon Kasturi methi
  • One green chilli chopped
  • 1/4 tsp turmeric powder
  • 2 teaspoon of Kashmiri red chilli powder
  • 3 tomatoes chopped

Method :

  1. In a pan, heat oil and add cashews. Saute them until they turn light brown and add tomatoes and green chilli to the pan.
  2. Add salt and mix well. Then, add turmeric, chilli, coriander powder, garam masala and mix well. Add water if needed.
  3. Let the mixture cook well and wait until the oil gets separated by the sides. Turn off the stove and cool the mixture completely.
  4. Pour them into a blender and make them into a smooth puree.
  5. Transfer the puree into the pan and simmer the stove. Add the paneer cubes in it. Add salt if you want.
  6. Then add sugar to make the gravy taste little sweet and add Kasturi methi powder as well. Let then cook in simmer for a few minutes.

For The Gravy

  • 3 tbsp of refined oil
  • 2 sticks of cinnamon
  • 6 cardamoms

  • One bay leaf
  • 1 tsp of Cumin seeds
  • Onions, 2 chopped
  • 2 tsp of ginger garlic paste
  • 1 tsp of red chilli powder
  • 1 tsp of grounded coriander seeds
  • 100 gram of tomato puree
  • 5 tbsp of thick curd
  • 1/2 tsp of sugar
  • Salt to taste
  • 100 grams of fresh milk

Making Of Koftas

  1. Combine the grated paneer, potatoes, khoya, salt, turmeric powder, chilli powder, ginger garlic paste, fresh coriander, cumin and coriander seeds grounded in a mixing bowl. Add mustard oil and raisins to it.
  2. Mix them well and knead them into a dough.
  3. Make them into round balls by rubbing sized dough by palms. Dust with flour.
  4. Close the bowl and keep it in the fridge for 15 minutes.

How To Prepare Paneer Kofta Gravy?

  1. Heat the pan and add oil to the pan. Get 100% natural cold pressed oils at best prices!
  2. Add the cinnamon sticks, bay leaf, cardamoms, cloves and cumin. Saute them till they are aromatic.
  3. Then, add onions, ginger-garlic paste, red chilli powder and ground coriander seeds and salt. Saute them until they are golden brown.
  4. Add tomato puree and fresh milk into the gravy. Stir the puree gently and let it cook for few minutes.
  5. Add sugar and curd to the pan. Let it cook for 10-15 minutes.
  6. Fry the Kofta balls in a separate pan using oil. Simmer the stove.
  7. Then add the shallow fried Kofta balls to the gravy and let it cook for 10 minutes.
  8. Garnish the gravy with coriander leaves and serve hot!

10. How To Make Paneer At Home?

Ingredients

  • Milk
  • Lemon juice

Method:

  • Add milk to the saucepan over a medium flame.
  • When the milk comes to a boiling point, stir them gently.
  • After the milk has boiled turn off the stove.
  • Add lemon juice little by little.
  • You will notice the milk curdling and the whey will get separated. Wait for a few minutes for the milk to curdle completely.
  • Drain the milk using a muslin cloth.
  • Tie the ends of the muslin cloth and drain as much as you can.
  • Flatten the paneer and keep it aside on a flat surface. Place a heavy object on it to get shape.
  • After 2 hours, remove the muslin cloth carefully and cut them into cubes!
