Cashew nuts are native to Brazil but grown all over the world. Porteguese colonist begin exporting cashew nuts since 1550s. In 2017, Vietnam, India and ivory are the major producers across the globe!

Cashew trees are large and evergreen growing up to 14 m. The leaves are spirally arranged, leathery textured with smooth margins.The drupe develops first and then the pedical starts to expanding which forms the cashew apple.

The true fruit contains a single seed which is often considered as a nut in culinary sense. My uncle is working in a cashew nut firm in South Africa and I ask him about the manufacturing process.

The raw cashew nuts are brought from the farmers and dried under the sun.

This cashew nuts and undergo a four step process which involves

  1. Steam roasting-the cashew nuts contain oil which is not good for human consumption. By steam roasting the outer shell of a cashew nuts are removed and produce edible cashew kernels.
  2. Peeling– The inner shell of the kernel is removed so as to produce the white nut. There, then send to grading department.
  3. Grading – This is done to sortout the half pieces and whole pieces of cashew. This sorts out the size, colour and texture of different nuts.
  4. Packing – These best quality nuts are then packed and traded across different countries. And here we are, scrolling down our mobile to purchase the nuts! Life is easy going right?

My uncle is working in a cashew firm in South Africa and he told that the wasted kernels of cashew are even used as a by product in majority parts of southern India. But it is not that good which can also cause air pollution.
